2021 CABERNET SAUVIGNON
The current vintage of Ultraviolet Cabernet is comprised of 95% Cabernet Sauvignon from the Red Hills AVA, and 5% Cabernet Franc from Coombsville in Napa Valley. Soft, round, velvety tannins. aromas of violets, blackberry, blueberry notes of pie spice, bramble.
Alcohol: 13.8


NV SPARKLING ROSÉ
This sparkling wine is a base of 85% Coombsville Cabernet Franc rosé and 15% French Colombard from Mendocino.
Sam has been making Champagne method sparkling wines for six years under the POE label, and decided to make a playful, fruit driven California sparkling, by utilizing the Charmant method. As opposed to fermenting in bottle, they take the sparkling base and instigate a second fermentation in stainless steel utilizing yeast and sugar. It is the same process as Champagne method, but a different vessel. The fermentation was kept cold, and lasts seven weeks. After a few months of rest, they bottle under cork. The dosage is 5 grams per liter.
